100 Grams Mocaf Flour
• 1 tsp Baking Powder (I use Double Acting)
• 1 tsp Baking Soda
• 1 tsp cinnamon powder
• 1 tsp Spekkuk Seasoning
• 1/4 tsp Salt
• 150 Grams Palm Sugar (if you don’t have it, don’t use granulated sugar)
• 80 Gram Ml Vegetable Oil
• 70 Ml Liquid Milk (70 ml water + 1 Tbsp Fiber Creme)
• 70 ml water
• 1 Tbsp Vanilla Extract
• 100 gram local carrot, finely grated

Frosting Material:

• 1 Pack Whipped Cream Powder (I used Haan 200 Gram)
• 400 ml Ice Water

How to make a vegan cake recipe:

• Preheat the steamer (you can also preheat the oven to bake).
• Sift all dry ingredients, mix well, then set aside.
• In a separate bowl, combine sugar and oil, mix well with a whisk.
• Add liquid milk (water mixed with fiber creme), then add water and vanilla extract, mix well with a whisk.
• Add dry ingredients, a little at a time, stirring with a whisk. Don’t overmix it. Add grated carrot, mix well.
• Pour the batter into the tin, gently tapping the tin containing the batter 2-3 times so that the air bubbles don’t get attached to the batter. Bake or steam for 30-35 minutes over low heat.

 

2. No-Bake Vegan Cheese Cake

Base material:

• 8-10 dates, remove seeds, soak in hot water
• 45 gr almond powder/walnut/oatmeal
• 45 gr desiccated coconut
• 1.5 tbsp coconut oil/light olive oil

Cheesecake fillings:

• 200 gr raw cashews, soaked for 5 hours. Wash clean, drain
• 200 gr coconut cream / thick coconut milk packaging
• 40-50 gr coconut sugar / palm sugar
• 3 tbsp water
• 3.5 tsp agar powder
• 100 ml water (for gelatin)
• 1 tbsp lemon juice
• 1/4 tsp salt
• 1/2 tsp turmeric concentrate/other natural coloring to taste

Toppings:

• Pomegranate seeds
• Coconut chips

How to make a vegan cake recipe:

• Soak cashew in boiled water. Wash thoroughly (boiled water too). Drain well. Dates soaked in hot water until soft.
• Puree all base ingredients in a food processor. Flatten in an 18 cm pan, disassemble.
• Boil 100 ml of water and agar2 until bubbling.
• Combine all ingredients, blender until smooth. If you want a firmer, denser texture, you need to blend all the ingredients first and then heat it up until it explodes. Give a little yellow coloring.
• Pour into the baking sheet with the base mixture. Chill in the refrigerator overnight.
• Add toppings, cut into pieces, and serve cold.

 

3. Banana Bread Vegan Gluten Free

Wet Material:

• 1.5 cups ripe bananas (5-7 pieces)
• 1/2 cup apple sauce (apple sauce/smoothies)
• 1/4 cup plant-based milk (not animal milk or liquid coconut milk/fiber cream)
• 1 tsp vanilla extract / paste
• 1/3 cup vegetable oil/liquid margarine (I reduced)
• 2/3 cup brown sugar (me: palm sugar) (this is very sweet, you can reduce it)

Dry Ingredients:

• 2 cups flour (me: or gluten free mix)
• 1.5 tsp baking powder
• 1/2 tsp baking soda
• 1/2 tsp salt

How to make a vegan cake recipe:

• Combine wet ingredients: plus palm sugar and mashed ripe bananas, mix with a fork/whisker. Then add the apple sauce. Stir again until smooth.
• Then mix the liquid ingredients such as vegetable milk (liquid coconut milk) and oil into the banana mixture, stir until smooth.
• Then add the liquid ingredients to the flour (dry ingredients). Give stuffing such as raisins, sukade or dried fruit. DCC slice. Just be free. Mix well. Topped with flaxseed, almonds and chocolate chocochips. Free.

• Preheat oven at 170c.
• In a bowl, combine all dry ingredients, mix until smooth.
• Add the wet ingredients to the dry ingredients and mix until smooth. You can use a spatula/whisk/chopper/blender).
• Grease the ramekin container with coconut oil, add 1/2 of the mixture, put the chocolate in the middle and cover it with the mixture.
• Bake for 14 minutes at 170 dcl.
• Remove from the oven, put on a serving plate, enjoy while hot.
